Using a 1400kg Texas Offset Smoker – 100% wood fired with Queensland Vintage Ironbark – we slow cook for up to 14 hours using only the highest quality raw produce resulting in the finest tasting finished product.

Beef Brisket

Smokey, succulent, and tender. Beef brisket is a Barbecue staple. Covered in our House Texas BBQ rub, and smoked for 12 hrs.  A whole brisket feeds 20-25 people, or 15-20 hungry individuals.

• Brisket Whole: $280
• Brisket Whole Wagyu: $310

Pork Shoulder (Pulled or Chopped Pork)

Rich and Tender. Our pork shoulder, pulled or chopped will hit the spot. Covered in our House made Pork Rub, and smoked for 10 hours. A pork shoulder will feed 15-20 people.

• Pork Shoulder: $180

Lamb Shoulder (Pulled or Chopped Lamb)

Just like Grandma’s Sunday Roast, only better. A whole lamb shoulder, covered in our house made Lamb Rub, and smoked for 8 hours. A Lamb shoulder will feed 8-10 people.

• Lamb Shoulder: $85

Wagyu Beef Cheeks

Unctuous. Wagyu Beef cheeks, coated in our Texas BBQ rub, smoked for five hours then confit until tender.

• Wagyu Beef Cheeks: $90/kg (cooked weight)

Beef Short Ribs

Beef Short Ribs are the pinnacle of Barbecue. We coat our Short Ribs in our House Texas BBQ Rub, and smoked for 10 hours until unctuous and tender.

• Beef Short Ribs: $85/rack

Chicken Wings

The Crowd Pleaser. Coated in our Poultry BBQ Rub, and smoked for 2 hours. Perfect as is, or paired with one of our Barbecue Sauces

• Chicken Wings: $20/kg

Texas Hot Link Sausage

House Made, Texas Style Beef Sausage. Made from organic, pasture raised beef and encapsulated in a natural casing, and smoked to perfection.
